We were fortunate enough to purchase a small amount of this green coffee from our friends at Prodigal and we couldn't be more thrilled. If you're in the Boulder area swing by our cafe to experience a cup of this from our menu.
Grown by Garrid Muñoz on the family's 11 hectares in San Agustin, Huila, Colombia this really beautiful Chiroso is grown at over 1750m on rich organic volcanic ash. The ripe cherries were selected, deplulped and fermented for 48 hours. After thorough washing the coffee dried in parabolic driers for 20-25 days.
In the cup, we taste a delicious sweet raspberry with bright citrus notes and dried apricot.
