        Honduras Santa Lucia Casona

        The cherries are picked ripe, dry-fermented for 36 hours, dried slowly on raised beds under greenhouse shade for up to sixteen days, then rested in parchment for a month before milling. That patience is what you taste. Washed Geishas from Santa Lucia have taken first place at Cup of Excellence Honduras twice, and this lot shows why.

        In the cup, we taste Jasmine, Nectarine, and Brown Sugar, all carried by a very juicy cup that leaves you wanting more.

        Fincas Mierisch encompasses 14 coffee farms in Central America. The farms are situated across 3 provinces: Matagalpa, Jinotega and Comayagua. Each farm features unique soil composition and microclimate, creating distinct coffee characteristics. And three farms – Cerro Azul, Santa Lucia, and Lalita – are all situated at higher elevations than others counterparts, in the Rio Blanco area of Siguatepeque, Comayagua province.

        Currently, Fincas Mierisch is operated by three generations: the 3rd, 4th, and 5th. Dr. Erwin R. Mierisch, a third-generation producer, and his wife Maria Ligia McEwan de Mierisch took over the legacy in the early 1990s. Under the leadership of the fourth generation (Erwin Jr, Eleane, and Steve), the company transformed from commercial coffee to specialty coffee, putting coffee of this area on the international map. Today, Erwin III (Wingo), representing the fifth generation, continues to develop the company as head of post-harvest processing innovation.

        Fincas Mierisch is committed to producing high-quality specialty coffee through rigorous harvesting and processing protocols. They particularly emphasize consistency in quality, aiming to maintain or improve standards with each harvest. This dedication is evident in their meticulous harvesting and wet processing protocols, alongside continuous process innovation.
