        Ethiopian Habtamu Goro

This is our second coffee from Habtamu Fikadu Aga this year and it's difficult to decide which one we like more.  They are both different but have very nice flavors and are superbly clean.  The care this coffee has had is impeccable.  The cherries are held with about ten percent mucilage, fermented for 24 hours, hand washed, then dried on raised beds out of direct sun for 9 to 12 days, turned and inspected every few hours by two dedicated quality-control managers who track moisture and pull defects at each pass.

In this cup we taste Lavender, Lemon and Peach with a nice silky finish.

This washing station uses a combination of machinery to sort, pulp and remove the mucilage. The final product of this is a bean with about ten percent mucilage left on it that is fermented for 24 hours before finally being handwashed and laid out to dry by the sun on beds for 9-12 days. The beans are not exposed to direct sunlight and every few hours the coffee is turned and inspected to ensure consistent drying. During these inspections the moisture content is measured and the beans are sorted for any remaining defects. The coffee is then bagged and stored.
