        A Natural process in coffee usually means the coffee is sun dried as whole cherries.  This method enhances the fruitiness of the coffee and we certainly notice it in this roast.  We taste hints of Grape, Mango with a very subtle blueberry on the backend.

        Ethiopian Guji Coffee – Ethiopian coffees are very famous for their fruity and floral flavors. These crops are located between 1,800 and 2,000 meters above sea level, which contributes to the unique taste and quality of the coffee. The altitude of the crop is important because the higher the altitude, the slower the ripening of the berries, resulting in a richer flavor profile.

        Coffee trees are gown throughout this land, but are most concentrated in the southern mountains with the best altitude and conditions for growth. Typical regions include: Harrar, Yirgacheffe, Sidama, Limu, Djimma, et. Guji is famous for producing a type of coffee considered one of the best in the world. The conditions allow the coffee tree to grow slowly so the tree can accumulate nutrients in the coffee beans and develop the best flavors.
